You don't, unless you can feel them slacking. I just came back from a ride with my 12 year old son. His chain came off about a mile from home, and I never knew. We had the motor on for that time though so it didn't matter.

Having ridden as captain and stoker on numerous other traditional tandems, it's striking how much communication needs to happen with the stoker. Lots of "Coast now", "Feet down", "Bump!", "Downhill ahead" cries happen. Pretty fun though.
