I just started my build of a DAX 70cc, and it looks like I need to bend the exhaust out of the way of the peddle. What is the best way of doing this? I was thinking of putting it in a vise and heat with mapp gas and slowly bending it, but I'll take any suggestions.

muffler

How much does it have to move. is it a stock muffler?
The closer to the engine you bend it, the less of a bend will be needed.
If it is a minimum amount of a bend 5 deg. or so I wouldnt bother with the mapp gas.
Of course do not bend it while attached to the engine.

Don't bend it too much or you'll kink the pipe.

Have you tried to notch the exhaust flange mounting holes to maybe shift it left to right??

I had to bend my stock exhaust too when i first put it on my bike (it's now been replaced with an expansion chamber). I heated the pipe with a propane torch, and then i used a pry bar inserted into the pipe where the flange is. I put the bar in as far as it would go and gently bent the pipe. Be careful or you can kink the pipe.

I cheated and took the whole thing down to the local muffler shop. He ground the weld off where the pipe mounts to the barrel, re-aligned it to clear the pedal cranks and sit parallel to the frame, then re-welded and gave the weld a squirt of heat-proof silver.
I tried to pay him, but he wouldn't take anything. (I owe him one.)
Much easier than messing with it myself. (I would have happily given him $50 for the messing around.)
I also added a good, solid strap mount on the muffler to take the weight. (Not a good idea to just hang it off the studs.)

getting the flange re-positioned is a great idea...especially if you can get it done for free like that.

Kids, don't try this at home. Had one build that the crank was just barely tapping the exhaust. I always wear steel toed hiking boots. Gave it a good kick and was perfect.
I really don't suggest this.

Bent one in a vise and I did a butcher job on it.
