I'm wondering if a friction drive with an internal hub transmission like the Nexus 7 spd would work as far as changing gears? Or would the roller just push the tire at a given speed? I would imagine it would work?

I suspect this will go to the friction drive forum.....

But sure it'll work, same as on any bike with any kind of mechs. It'll be one speed power assist at the wheel and you'll have the same number of pedal speeds at the crank. The only way to alter that is if you were to put engine power to the crank.
