Pedaling question to shift kit guys

At what speed can you no longer keep up your pedaling?

I'm thinking of going to a shift -kit type deal, but I like to be pedaling with the engine up to around 18 mph (my pedal crank rpm limit) at times.
 
Really can not pedal with it unless the engine is bogging...just off the line and then when the RPM's come up, can not do much to help.

so I would have to gear the engine to the pedal crank at a ratio which would assist my feet- say 30 to one crank rev for my HF79. That is a lot of ratio, but doable.

This would give an engine assist up to about 18-29 mph at 3000 rpm in high gear.
Beyond that, I stop pedaling since my feet are out of rpm.
Then, the engine would carry the bike to top speed.

I guess the 4-stroke shift kits are a bit different than the 2-stroke ? maybe due to the centrifugal clutch? But I'm currently running a Honda GXH50 and the Grubee 4G for Honda 5:1 Belt drive with a fixed 11t output driver to the 17t left side of the Jackshaft to another 11t driver on the right side of the jackshaft then to a 44t large chainring on the crankset and then a 36t chainring to the rear cassette. If I feel the need I can pedal assist into the middle 20's mph.

You can re-gear to pedal assist better but most people find that once you have gears you no longer need to pedal assist because you can get the power you need to do what you want without having to pedal.

Thing is, I do want to get some exercise on this bike.
It is wonderful to know I can zip around on straight engine power, like if I am suddenly in a hurry (inpending rain or red light).
The speed is addicting though, and I am forcing myself to remember that this toy is an exercise machine with a plus.

Currently I'm running a SA 3speed hub as a jackshaft on a hard tail bike and running the power over to the right side would allow me to adapt a suspension triangle to the back.
