I'm building a rack mounted weed eater bike. However, my rear sprocket can only be mounted where the chain sits a half-inch from the nobbies of the tire. Will it hit the tire when I'm riding it? I might be going over some bumps.

If you are thinking of running a chain direct from the engine to the wheel- you are going to need a huge sprocket to get the ratio you need.
I just advised against doing a weed eater conversion. They usually have one main bearing and are not designed for side loading (like with a chain), have very little power too.
by the way, a 1/2 inch is enough clearance for a chain.

Good point, loquin.

P.S. professor, if you dissasemble a weed eater you will find there is 2 bearing, but on the same side. If it had one, it would twist with every power stroke. :) Anyways, I have a intermediate reduction on the engine so the pressure is on that. In total I have 14:1 and it's a big 31cc reed engine.
