Picked up this Mongoose Malus on the cheap, it's practically new, I think the owner rode it a few times and put it in the basement. Trying to decide on a jack shaft 2 stroke kit, Bafang mid drive electric, or try an off-set mount the motor. Off-setting the motor would involve fabricating some mounts. I have seen a few of them done, and I like the standard motor -to-wheel drive train. Any of the manufacturers make mounting systems for the 4" tire fatbikes?

This one is good bones for motorizing, everything is straight, tracks/brakes well, and the Tourney derailleur shifts great, nice simple steel bike. Electrifying it would probably be too expensive, a mid drive with a battery is 700-$800. I'm leaning towards the 2 stroke jack-shaft set-up.

Depends a lot on the engine and jackshaft you use, but you could potentially spend nearly the same amount of money on a 2 stroke and jackshaft setup as you will on a Mid-Drive (unless you buy a SBP kit while they have everything cheap). I admit that it does really depend on the kits in question in both cases.
