About e-bike's motor, what is the difference between 500W and 350W????

I fabbed a 48volt 1000 watt ebike and it has tremendous torque - great acceleration. I bike at a 2-3 throttle setting. If you put it on 5, the max, you could easily do an unintensional wheelie. Be careful.
