For fried rice, I prefer Canola oil or vegetable oil.

For fried chicken or other fried adventures, peanut oil. If I am feeling wealthy, cashew oil.

It sure sounds like we be tired of "OIL" related threads once we're talking about lard. I can hear my arteries hardening now.

I make chicken cracklings by rendering out all the fat, that fat in turn makes the best biscuits. Two treats in one.
