Disc Brake Gurus?....Sprocket Adapter

Just wondering what companies did u find 230 and 256mm disc brakes from i need discs that big to get my caliper out of the way of my sprocket and chain

Kind of? I'd say definitely, not to get too generic but ebay has everything from the smallest to the largest, believe me the Chinese wasted no time copying everything.

Definitely.
I acknowledged the Chinese eBay sellers where I wrote "etc". ;)
They don't do the unusual sizes.

I had to wait a bit to see the used Hope 220mm I wanted. Saw a nice Hope 225mm floating rotor while I was waiting for my 220 though (but it was way more expensive)..

You won't get a 254mm on eBay. That's a rotor that costs more than your engine. Available through shops that cater for the alpine touring and RTW cyclists perhaps.
