Thats why you have a backing. Punching free air yeah, with a backing to keep it from deforming you should be ok. Wish @Wrench was back, hes the gasket master. Check out his post on making gaskets.
A empty .223 or 5.56 case makes a nice gasket punch for 1/4" or 6mm bolt. & when you mess it up you just grab another one. I use a piece of 1/2 aluminum plate for a back up when punching gaskets.
Drill out a hole in the center than use left/right angled tin snips to cut. Yellow handled snips are straight cut, green right cut, red left cut. Does a nice job if you take your time.
