Honda GX50 Adjustable Carb?

I see what you're talking about. I'm just not in a place where I can drill holes at the moment.
A couple more observations:
1. That pin behind the brass plug is some sort of spring loaded plunger.
2. Carb is a Walbro WYB. I'll include pictures of all the markings I can see.

Here is a carb that should replace yours if need be. Its fully adjustable with a 11mm intake. You could got to a 15mm carb if you feel you need more power & dont mind a little work.

Clones are made for these carburetors that are adjustable. They'll have 3 adjustment screws. Replacing a jet won't be necessary. What you'll need is a tachometer to set the adjustments and a metering lever adjustment tool. You'll also have to adjust it at the altitude you plan to be riding in.

Your biggest issue will be you're taking a friction drive into a mountainous region. Depending on the total weight (bike, rider, cargo) you may find it impossible to get up really steep hills.

I'm totally fine with pedal assisting on steep climbs, or even all the time for that matter. I intend to use this as a bicycle with assistance rather than as a small motorcycle/moped.
I also am fine with less than ideal engine performance as I rise in elevation. Altitude is going to be so varied that I'm not going to take time to adjust the carb every few miles. I just want to be able to set it well enough for the range of altitudes I'll be at for any given day.
 
How would I determine which clones would fit? i.e. What are the important measurements? Will the mounting holes all have a standard pattern/spacing?
