Iv just fitted a new pot piston and cylinder head and when I turn it over with a spanner the piston is hitting the head will a second head gasket be ok

Better to use a thicker head gasket than 2 thin ones. But sure slap 2 head gaskets on and see how she runs.
You also can add another cyl base gasket. But by doing that you might have to adjust your piston ports.

Sounds like you might have the wrong piston. They come in a low hole and high hole version. Sounds like you put a low hole in place of a high hole. Compare the wristpin hole between your new piston and old one and you may see the difference

Thanks I will take it apart and check

There are two piston types, place on flat surface and measure the one you orginally had on it, one size is 15/16, the other 1 & 1/16. Buy accordingly. For a quick and dirty fix, as wrench suggested add some gaskets to increase spacing.
