What is the best way to enlarge the rear center hole of the drive sprocket? My rear hub is quite large on my new project and I need to "bore out" the mounting hole, by about 3/8 inch in diameter. And I need it to stay true. Thanks.

 the most accurate way, if you don't possess the skill and proper equipment, is your local, friendly machinist.

I just use a large bi-metal hole saw. Just make it a little bigger that your hub so if you don't get it centered it won't matter. I use cheap steel front sprockets for bicycles. They cost a fraction of the price of the ones that have the holes arleady drilled. I just bought a 38t for $6 or $7 bucks off ebay.

Yeah, hole saws don't make true holes.
Use a lathe or a milling machine.
You can also do it on a drill press with a fly cutter type hole cutter.
If you don't have access to these machines, go see a machine shop.
