I've found it near impossible to fit the rag joint sprocket through my spokes with all 9 bolts. If I can force all of them through, the bolts on the spokes pull the sprocket in the opposite direction of where it's supposed to be centered and I can't seem to get more than seven bolts through without them pulling the sprocket. I wasn't sure if I could just use 3 or 6 bolts if they're dispersed evenly. Wondering if that would hold the rag joint setup in place or no?

What is your spoke count? Can 9 be divided into it evenly? For the rag joint to work your spoke count has to be 36.

Math doesn't work that way. You'll need a 36 spoke wheel for the rag joint or a hub adapter if you plan to use the 32 spoke wheel.

There are nine bolt holes in the standard sprocket, so as SW Jerry and others have pointed out, it just won't work with anything other than 36 spokes. They don't make 45 or 27 spoke wheels.
Do yourself a favor and try and use a hub adapter, or bolt the sprocket to a disc brake hub which is more work as you will need to buy or make an off set to move the sprocket closer to the wheel so it will have a change of aligning with the drive sprocket of the motor.
