Switchblade build or fools errand?

I can see how a women might scratch her head at her spouse buying bicycles in his early 50s. When you step outside of the show and look at it, it is kinda funny. The oldest wants a airplane, and Dad just wants a bike. Go back 16 years and the roles reverse.
 
I'm realizing that I should have taken a tape measure with me to check out the bike- I would like to plan this build in advance so I can buy parts as they become available. I'm about 90+% sure what I want to do with this-

The switchblade frame (obviously) Disc Brake preferred

Engine- Honda GS160 (or equivalent knock off) seems ideal but it slightly exceeds the California limit - The GX120 would be OK but it points the wrong direction and I would be forced to mount it rotated 90 degrees anticlockwise- is there a vertically oriented cylinder option that comes in at 4HP that I don't know about?

and the trans/clutch/???- I'm thinking a CVT is the way I want to go but I'm open to ideas if that's not the best idea. This is the area I will need the greatest guidance. Can I go engine-CVT-back sprocket? or will I need further reduction?

Looks great. Love the forks. Do you know the diameter and length of the fork tubes? They look alot like the west coast chopper forks.
That's a really cool bike. Can't wait to see what you do with it.

Looks like the fork tubes are about 1 3/8 diameter and ~ 36 inches long. They are actually “ZOOM” brand
 
Speaking of forks- how am I going to put brakes on these? Notice there is a mount of some type and a cable end retainer in place- I think a disc was optional originally. Oh- and don’t remove that sticker 😱
