Think I've already heat seized new engine??

Have you done most of the running of that engine at high speed, or pretty low?
Basically, it might be bogging, for instance, because the needle is set too lean. But the needle controls the low speed, so if you've been running it mostly at high speed, then the plug is just indicating the running condition at high speed which could be misleading if you tried to use it to diagnose the bogging. Not saying that's the case, just something to think about. Hope that makes sense lol!

Unless your way up high in the mountains or in the high desert like I am at a 4500 ft. elevation, your needle valve should be around the middle position...The picture below will show you where the C clip postion grooves are as regards lean/rich on the common 2 stroke motors running either the old style NT or the more up to date, better built, smoother running BoFeng carburetor.

I moved to leaner position didn't seem to help I don't have an idle screw in carb either cuz I've lost it feels like the spark plug isn't consistently sparking as no matter what speed eventually it will die out
Well, if the idle screw is missing, it will never run right. You need to replace the carb.

I also have substituted the idle screw for a normal screw just to temporarily stop any air leak but I'm guessing this is not ideal for the engine at all as I'm pretty sure it seized up my bike last time
The way it sounds you just have the massive air leak and never made it to a seize. Look in the exhaust port. If you don't see a scratched mu mess your good lol

Yh I gapped the plug
I'm gonna skip you to the part we're your bike runs right lol.1 ngk b6hs or 7,2 you NEED a screw with a spring on it in the the idle so it stays put. 3 your lean fatten the clip up 2nd from bottom. 4 some motors like different plug gaps try from .025 to .035. Some of mine like .035 even stock motors. 5 CARB CLEANER CHECK FOR AIR LEAK. 6. More oil= leaner mix bcuz harder to pick up. 7 check head torque. The point is your lean. Adress the idle screw first. No a reg screw won't work it needs a specific point. Get a screw from another carb. After that check for torque on all bolts. After that start bike and test. I know that kind of a mess but idk where to start with you lol.

Pretty high I reached 28mph on first ride which is why I originally to thought I had seized it
