Throttle...Throttle is now wide open with no input... Any ideas why?

OK, I'm taking a guess here since we can't see how it is near the handle bars. From the throttle on the handlebar you need a wide loop for steering. Then route it along the top tube to where the carb sits, use 2 cable ties. 1 near the carb and one where the cable 1st meets the top tube. Is it still too long?
 
Ray...It's not too long, your not routing your cable and zip tie-ing it down correctly against the frame is your problem.

Take a look at how all my cables including the throttle cable all jut out to the front of my handle bars and then glide along the frame and get zip tied to the frame in different spots until they reach there destination.

Just like your brake cables are always facing over the front of the handlebars frist and then you align those cables around your frame in order to zip tie and secure them there.

Your cable-ing and wiring, as well as whatever that Saran Wrap crap is around your CDI unit looks like an untidy disaster looking for a place to happen.

You can see the cables looping out the front.

Not the best shot, but the rear brake and throttle go under the gas tank and out the front. There is a gentle loop off the carb and under the tank.
