I don't start worrying about head temps until they go past 350. 400 and above is when it gets critical. 300 to 350 I adjust my riding to allow the motor a chance to cool back down.
My Phantom at part throttle, running at about 35mph on a typical warm summer day (high 80 to low 90 temps) will hover around 270 to 280. It will hold that temp pretty much the entire time.
