If you can get your engine to hit 8000 rpm at full throttle on level ground with the mods, you'd have a top speed around 42 mph. Your cruising speed at 6000 rpm would be around 31 mph.

Before you go seeking more speed, first concentrate on your braking system. Stopping is far more important than going fast.
 
Also should I use 1 or 2 cylinder gaskets
You would have to measure the squish gap to determine if you need one gasket or two.

Get a piece of solder, remove the plug and stick the solder in the hole. Make sure you put the solder inline with the wrist pin and up against the cylinder wall. With the clutch engaged, roll the bike forward so the piston compresses the solder. Remove the solder and measure how thick the solder is where the piston came up against it. That measurement should be between .7 - .9mm.
