There might be another possibilty: I buy a cheaper single spring fork on ebay
and add the disk brake with an adaptor. Anyone done that? The ebay forks
are about $80-90.

i would not go cheap on a front fork. That front end is the most important part of the safety of the bike in my opinion.

There are a lot of cheap springer forks on the market. They are of a weak design and have been known to fail, all the weight is on a fairly thin dimpled pipe with a narrow bolt holding the show from collapsing. I found an example but I don't mean to dis the company or anything, just what came up.

Here's the problem: I need to be assured that a disk brake adaptor can work
with this type of springer fork. It has no mounts for V-brakes, so if I can't
find an adaptor that works, I'm "up the creek without a paddle."

I have to decide whether I want to forego front suspension and just add a front
disk brake to my present steel fork which is very sturdy, much stronger than
a springer fork.

Nice to have a bit of suspension to soak up the pot holes.

I wanted to get the CDH Power triple tree suspension fork but they only come in 1 1/8 steerer tube. The frame I have has a 1 inch head set so I ended up with the springer forks with a 1 inch tube. It will look nice and add a little length to the wheel base.

Here's my favorite type of adapter:
